Meet your host Reshma, a local food professional who loves feeding people, in her beautifully decorated apartment in Santacruz in North Mumbai. After a refreshing drink, head to the Santacruz market (perhaps by rickshaw!) and pick up fresh ingredients for the meal that you will prepare together. Reshma will introduce you a variety of regional fruits, vegetables and spices and explain how to select the freshest ones. Return to her kitchen and learn to cook a traditional Maharashtrian thali, truly regional cuisine. Learn to cook 2-3 regional dishes such as pandhra rassa (mutton and creamy coconut milk soup), chicken masala or a seasonal vegetable, typical of what her family eats every day. You will plate it on a thali (round traditional plate with food in small bowls) and enjoy your thali meal that will include additional dishes that Reshma has prepared in advance. End your meal with shrikhand, a sweetened yoghurt dessert and memories of a local, cultural and culinary experience!
