Your experience will start with a tour of your host's neighborhood market where they will help you discover regional produce. The market is located in a building with stalls filled with a variety of local fruits and vegetables. If you happen to book this tour on a Saturday, your host will take you to the local tianguis (street market). Tianguis have been important in Mexican trade and culinary traditions since before the Spaniards arrived. Each neighborhood has it's own tianguis, which operates one or two days per week. After your market visit, you'll join your host in their kitchen and learn to make traditional dishes such as chilaquiles, corn quesadillas with fillings such as mushrooms, nopales (cactus), huitlacoche (corn fungus), and flor de calabaza (squash flowers), with beans or a tomato chickpea rice as a side. The cooking portion of your experience will last 1.5 hours before you and your host sit down to enjoy the meal.
