Full description
Mexico City was built directly on top of Tenochtitlan, stone by stone, the same way today's Mexican food was built on top of a 9,000-year-old corn tradition. This tour traces both layers at once, six stops through the historic center tasting how Indigenous, Spanish, and Lebanese influences all ended up on the same plate.
Taste a wedding mole made the traditional way, try wild-gathered insects, tacos al pastor sliced fresh off the spit, and pulque poured in the city's oldest surviving pulquería.
Begin at a tiny, family-run eatery tucked off a side street, the kind of place with a handwritten menu and one or two women running the whole kitchen. Taste a wedding mole, a recipe combining two family traditions, made fresh every Monday in a giant clay pot, stirred entirely by hand.
Walk into a market that's operated on this exact spot since before the Spanish arrived, first as an Indigenous open-air market, later rebuilt as vendor housing in 1933 that simply never left. Taste four kinds of insects, wild-gathered by hand rather than farmed, then rim a glass of mezcal with worm salt for the toast.
Step into a former convent, its cloister now home to a taco counter, a striking visual proof of the tour's whole theme: history literally built in layers. Watch tacos al pastor sliced straight off the spinning trompo, a dish that started as Lebanese shawarma before Mexico City turned it into something entirely its own, then share chilaquiles and a michelada at the table.
Continue to a business built entirely around traditional corn techniques for a taste of huitlacoche, a corn fungus treated as an agricultural disease in the US and prized as a delicacy in Mexico, before a stop for traditional Mexican pastries.
The tour finishes inside the oldest continuously operating pulquería in the historic center, open since 1903, for a taste of pulque, Mexico's oldest fermented drink, agave in the form people drank it a thousand years before anyone learned to distil it into mezcal.
