First thing in the morning, depart Florence by train for Bologna. Meet your private driver at the Bologna train station and set out for the Parmigiano Reggiano cheese factory. See all the steps in the production process of Parmigiano Reggiano, an artisan cheese made only in the Emilia Romagna countryside. Witness the morning delivery of milk from local farmers, crafting the curds, and the final aging process. The tour finishes with a Parmigiano Reggiano tasting, including cheese aged 16 to 36 months, alongside a glass of local Lambrusco. The tour continues at a traditional Acetaia, where certified Balsamic Vinegar (Aceto Balsamico Tradizionale di Modena D.O.P, aged minimum 12 years) is made. An Acetaia is not a factory, but a place where a single family produces small amounts of fine balsamic vinegar using ancient techniques of aging grapes in a series of oak barrels. The tour includes a tasting of balsamic that is 12 years and 25 years old. The next stop is a prosciutto factory in Savigno, a small village in the hills outside Bologna. Taste slices of prosciutto di Modena D.O.P with a glass of local Lambrusco wine. Finally, enjoy an authentic Italian lunch in the countryside at either a traditional trattoria or a certified organic winery. The day finishes with a multi-course lunch paired with local wines. Afterwards, your private driver brings you back to the train station in Bologna.
