An Acetaia is not a factory, but a place where a single family produces small amounts of fine balsamic vinegar using ancient techniques of aging grapes in a series of oak barrels. The tour includes a tasting of balsamic that is 12 years and 25 years old.
The next stop is a prosciutto factory in Savigno, a small village in the hills outside Bologna. Taste slices of prosciutto di Modena D.O.P with a glass of local Lambrusco wine.
