The chef will be greeting you and showing you around the cooking area and the equipment you will be using. The demo will be done both by the chef and experienced village cooks.
Sri Lankan cuisine revolves around the various spices and herbs; such as cinnamon, cardamom, cloves, dill, and curry leaves; that can easily be obtained in the island. The food is often heavily spiced with many subtle flavors showing up. However, balancing the spices so that it doesn’t overpower the food, is a form of art. During the demo, you will learn methods to optimize the use of spices in Sri Lankan cuisine.
The dishes that you will be shown will include favorites such as milk rice (kiribath), sour fish curry (maalu ambul thiyal), potato curry, crab curry, achcharu, kokis, and much more. You will learn the recipe and see the methods used when cooking them. You will also get to try your hand at them with the guidance of the chef.
